In cooking, what the hell does “sweating” an eggplant mean?
duffyj83 asked:
I am looking up recipes for eggplant parm and I keep reading suggestions to “sweat” the eggplant by coating it with salt before cooking. Someone please humor this inexperienced cook and please help me out….does this mean applying the salt after it is peeled? Or slice it then apply the salt? And then do I simply rinse the salt off with water or leave it on?
